Yes, using Custom Meta Data, default trigger values can be changed. Here is the path for changing Custom Meta Data- Setup->search Custom Meta Data in Quick find -> click Manage Records for Rules -> Change the respective rule trigger criteria.
Yes, using Custom Meta Data, field mappings can be changed. Setup->search Custom Meta Data in Quick find -> click Manage Records for Object Settings -> Modify existing rule mappings or add a new one.
No, only 1 level field mapping is supported. For example, while creating the order, if you want to map/edit any field from Account, we can’t use relationship to specify field from Account and we need to create a formula field on Opportunity to have Opportunity <-> Order Mapping.
